A Rose By Any Other Name

What makes pesto pesto? Is it the pine nuts? The basil? The romano cheese? The combination of the olive oil and garlic? I’m not really sure.

But if something is loosely based off of the classic pesto recipe and has a flavor that is reminiscent of the well known Italian sauce- I’m going to go ahead and call it pesto.P1030216

And the pesto that I’m presenting to you today is BEET pesto. Now before you turn up your nose and run… let me tell you… not only is this pesto very pretty (priorities) but it’s straight up delicious. P1030217

I’ve been loving on beets for a while now but I tend to struggle with ways to fix em up. I eat them frequently in salads and on sandwiches- but I hardly ever do anything with them that deserves any time of merit.P1030218

I made it with the intention of using it on these Avocado Beet Pesto Sandwiches. Which I totally did- and have packed for lunch today {score}.P1030238

I used provolone cheese instead of mozzarella though because it’s what I had in the fridge. I have a feeling it’s not going to matter- a warm avocado, cheese, red onion, and beet pesto sandwich? Oh yeah. Usually I’m one to add some meat into my sandwiches- gotta love a good deli sandwich- but I think this one is a perfect vegetarian sandwich.P1030236

The recipe made a lotta pesto- almost a whole mason jar full. So the night that I made the pesto, excited to start using it, I topped roasted green beans and mushrooms over brown rice with the sauce.P1030225P1030227P1030229

GAH. Weird color blends but SO GOOD.

You need this stuff in your life.

You could even impressive the relatives and loved ones in your life by making this, jarring it, fancy-ing up the jar with some twine or ribbon, and giving it away as a foodie gift for Christmas. Christmas present suggestions are now valid because it’s just around the corner now! Eeeee!P1030220
